Milk powder intermediate product is a complex material due to sensitivity to shear, temperature, and time. Understanding rheology is beneficial to determine process limits. This study investigated milk concentrate as casein micelle suspensions at different temperatures and solid concentrations. Rheological predictions are challenging due to casein deformation and phase transition.
