Description: Project to determine chemical profiles of New Zealand Blackfoot Pāua (Haliotis iris) and to investigate it's effects in an in vitro model of human digestion and fermentation. The project involved collating knowledge of Blackfoot Pāua from a variety of sources and considered fermented Blackfoot Pāua as an aid to digestive health.
