Description: Project to determine the chemical composition of selected Aotearoa New Zealand monofloral honeys, identify consumer preferences and opportunities to enhance profitability of selected honeys.

This project focused on prominent native monofloral (single flower nectar) honey including kānuka, rata, rewarewa and kāmahi. Examples of honeys from across the different geographical regions of the Te Pumautanga o Te Arawa (TPT) rohe (territory/boundary) were analysed to search for specific chemical signatures and potential unique biomarkers. New knowledge gained from this project will provide further awareness of the unique properties and consumer value of lesser-known honeys by examining the consistency and flavours of honey that consumers prefer, as well as consumer perceptions of Māori values and provenance.
